Thit Kho
A. Ingredients (for 2 ppl):
- Pork belly: 500g (Preferably half-frozen)
- Eggs: 2
- Brown sugar: 3-4 tbs
- Fish sauce
- Salt, pepper
- (Optional) Pepper flakes/powder
B. Preparations:
Slice the pork into preferred chunks. Slightly frozen pork chop would be easier for this step.
In a pot, add 3-4 tbs of sugar. Turn the heat to medium and caramelize the sugar. After 4-6 minutes or when sugar turn to dark brown, carefully add 1L of water. Quickly stir the mixture until sugar fully dissolves.
Put the pork into the mixture, add 3-4 tbs of fish sauce, a pinch of salt, a pinch of pepper, a pinch of pepper flakes/powder. Bring the heat to high heat and often stir the meat to prevent it from sticking to the bottom.
After boiling, lower the heat to medium and simmer in at least 30 minutes. The longer it cooks, the meltier the pork would be.
In a another pot, hardly boil 2 eggs. Then peel the egg and add them to the pork sauce. When finished, serve the pork and egg with rice. Enjoy~
