Crab Soup
A. Ingredients (for 2 ppl):
- Shrimps: 6-10 medium
- Crab or Crab stick: 3-4 sticks or 100g crab
- Mushroom
- Sweet corns: 1 cup
- Spring onions: 1-2
- Egg': 1-2
- Corn starch
- (Optional) Fish sauce
B. Preparations
Shred crab/crab sticks into threads or crumbs.
Cut mushroom into small pieces.
Thaw the shrimps if frozen.
Chop the spring onion finely.
In a pot, put ~1L water and start boiling. Season lightly with fish sauce and salt. Add shrimps, crab, sweet corn, and mushroom.
Reduce the heat after boiling. In a bowl, add 2 tbs of corn starch and dilute it with enough water. Pour the mixture into the soup and stir.
Break the egg into a bowl and gently beat the egg yolk and egg white. Don’t mix it too well.
Stir the soup while hot, then slowly pour the egg in the outer of the pot. Continue stirring until the egg is cooked. Season accordingly.
When serving, simply add pepper and spring onions.
