Chicken Wing with Fish Sauce

A. Ingredients (for 2 ppl):

- Chicken wings: 6-8 pc.
- Garlics: 4 cloves
- (Optional) Shallot: 2
- Fish sauce
- Brown sugar
- Sesame oil: 5ml
- Butter

B. Preparations:

  1. Crush the garlics and coarsely chop the shallots.

  2. Cut the chicken like the picture, then put it into a bowl. Add garlics, shallots, a small pinch of salt, 5ml of sesame oil, and marinate carefully.

  3. In another bowl, add 20g sugar, 40ml fish sauce, 15g minced garlic, and a bit of water. Stir the mixture.

  4. Put a pan into medium-high heat and add some oil. Fry the chicken wings until both sides turn golden and crispy.

  5. Get rid of extra oil and fat, then add the sauce mixture into the pan. Coat the chicken well with the sauce. After 4-5 minutes, add 1-2 tsp butter and shake the pan gently until the sauce is thickened.

  6. You can add some chopped spring onion for garnish, then serve the chicken with rice.
