Green Curry
A. Ingredients (for 2 ppl):
- Chicken thighs: 2 pcs
- Red bell pepper: 1
- Zucchini: 1
- (Optional) Egg plant, small: 1
- Green curry paste (you can buy this via Amazon or at Asian market)
- Lime leaves: 4-6 (same as above)
- Basil leaves: 4
- (Optional) Mint leaves: 3-4
- Coconut milk
- Fish sauce, palm sugar/brown sugar
- Chicken stock, unsalted
B. Preparations:
Cut the chicken thighs into even pieces.
Slice the zucchini, eggplants, bell peppers into small pieces.
Put a pot into medium heat and add little oil. Stir fry the chicken with some salt.
When the chicken has some colors, add the curry paste and 100-150ml of coconut oil. Start boiling.
After 3-4 minutes, add 200ml chicken stock and lime leaves. Add 1-2 tbs of fish sauce and 10-15g of palm sugar. When boiling, add zucchini, eggplants, and bell pepper and reduce to medium heat.
Simmer for 10-15 minutes until the chicken is fully cooked.
When serving with rice, add a few basil leaves and mint leaves. Enjoy~
